Join us at Rossini’s for a special collaboration with JW Marriott Hotel & Suites Saigon, a curated journey through Italian flavors, shaped by two chefs, one shared philosophy.
At the heart of the menu:
Fagottini alla Porchetta – porchetta-filled fagottini with pine nuts, raisin relish, mint, and Sicilian eggplant, paired with Mastroberardino “Redimore” Irpinia Aglianico DOC, rich in dark fruit and spice.
Lingua Salmistrata alla Veneta – crispy pickled veal tongue, layered with parsley and anchovy sauce, sharpened with horseradish and brightened by pickled onion. Paired with Rosa dei Frati, its delicate red fruit and fresh acidity bringing precision and tension to each bite.
As the evening unfolds, a richer expression emerges:
Manzo al Valpolicella – Wagyu tenderloin glazed in Valpolicella wine, served with Treviso tardivo radicchio and celeriac purée. Paired with Tanca Farrà, offering dark fruit, gentle spice, and a structured finish that deepens the dish.
From refined textures to layered flavors, each course reflects the character of Italian cuisine rooted in tradition, shaped by craft.
